The ingredients are specific enough that a last-minute trip to a general supermarket often comes up short, which is exactly when a fasting pantry stocked in advance actually matters.
What's actually different about fasting-pantry shopping
Regular grains, lentils, and table salt are off the list for most households observing the fast. What replaces them is a narrower, specific set of ingredients: buckwheat flour, tapioca pearls, rock salt, and a handful of fasting-friendly snacks, none of which show up in a typical grocery run.
Sourcing all of it in one order, ahead of the 11th, beats discovering halfway through the week that one ingredient is missing.
The staples worth having in before the 11th
Kuttu atta (buckwheat flour): the base for fasting rotis and pooris. Not actual wheat, despite the name similarity, which is exactly why it's easy to mix up if you're shopping in a hurry.
Sabudana (tapioca pearls): for khichdi and vada, one of the most-cooked fasting dishes across the nine days.
Sendha namak (rock salt): the salt used during the fast instead of regular table salt. Easy to forget since it looks similar on a shelf, but it isn't interchangeable.
Farali snacks: fasting-friendly packaged snacks for when cooking from scratch every meal isn't realistic on a weeknight.
